Small abattoirs are closing: longer runs, fuller vans

On 19 October a coalition of more than 150 organisations and farmers wrote to government asking it to protect small British abattoirs. Hugh Fearnley-Whittingstall, Charlie Ireland from Clarkson’s Farm, National Craft Butchers and the Sustainable Food Trust are all behind it. The numbers are stark: Britain has gone from around 2,500 abattoirs in the 1970s to about 200 today, so roughly nine in ten have gone. If you do private kill or buy direct from farms, that is your supply chain.

The coalition is leaning on a survey of around 850 farmers and land managers carried out last year by the Sustainable Food Trust, Soil Association and Rare Breeds Survival Trust. Roughly a third had already seen an abattoir they used close. Over four in ten said they would no longer be able to sell meat locally if their current abattoir shut, and nearly three in ten said they might have to close their meat business altogether.

Why does it matter to a shop or a small processor? The coalition’s point is that without small abattoirs, farmers lose their route to market and butchers lose meat with clear provenance and higher welfare behind it. They put the decline down to regulation and labour shortages, but mainly to consolidation, with fewer, larger firms controlling more of the supply. This lands on top of AHDB’s forecast on 15 October that pig meat production falls nearly 4% in 2027 to just under a million tonnes, with lamb down around 2 to 3%.

Here is my reading on the van side. If your local abattoir shuts or cuts private-kill days, carcases and boxed meat get collected from further away. A run that used to be 20 minutes becomes an hour or more each way, often with more drops added on the way back. That means more door openings and a fridge unit that has to hold 0 to 5°C for far longer with a full load of hanging weight on the rails.

So a few practical things before the Christmas kill rush. Pre-chill the van before you load, load quickly and keep the doors shut between drops. Check the unit is pulling down properly now, not in the second week of December. If you are hanging carcases, look at how the weight sits on the rail for a longer drive, and keep the rail and GRP lining clean between farm runs and shop deliveries. Electric standby earns its keep when a late collection has to sit overnight.

If you buy direct, ring your farmer suppliers this week and ask which abattoir they are using and whether that could change over winter. Book your Christmas kill, cutting and collection slots early. Roughly a third of farmers in that survey had already lost a local abattoir, and the ones left will fill up fast.

Quick checklist

  • Book Christmas kill, cutting and collection slots now
  • Ask farmer suppliers which abattoir they use and if it may change
  • Pre-chill before loading; keep doors shut between drops
  • Check the unit pulls down to 0 to 5°C with a full load
  • Check rail hanging weight and clean GRP lining between runs

If longer abattoir runs are on the cards, these are the chillers I would look at for holding temperature with a heavy load.
