Three temperature bands, three different jobs, and buying short on temperature is the mistake that costs.
- Chiller, 0 to 5°C: meat, dairy, produce, flowers and most catering. The law says chilled food must stay at 8°C or below.
- Freezer, -18°C or colder: frozen food. The law allows it to rise to no warmer than -15°C briefly during local deliveries.
- Deep freeze, down to -25°C: ice cream and anything that must stay hard-frozen, including some pharmaceutical products.
